Chinese Recipes - Stir-Fried Spinach in Shrimp Sauce with Bean Curd Cheese Recipe

Ingredients

  • 15 ml (1 tablespoon) dried shrimps
  • 675 g (1 1/2 lb) leaf spinach
  • 2 cloves garlic
  • 52 ml (3 1/2 tablespoons) vegetable oil
  • 5 ml (1 teaspoon) salt
  • 10 ml (2 teaspoons) bean-curd cheese
  • 15 ml (1 tablespoon) shrimp sauce
  • 22 ml (1 1/2 tablespoons) lard (use oil if not available)

Serve 6-8

Method:

  1. Soak the dried shrimps in warm water for 30 minutes, and drain them. Clean the spinach leaves, eliminating the tougher stems and discolored leaves. Crush and chop the garlic.

  2. Heat the oil in a large frying pan, or saucepan over a high heat. Add the shrimps. Stir them in the hot oil for 1 minute to flavor the all. Add the spinach, and turn it quickly with the all and shrimps until every leaf is well coated.

  3. Sprinkle the spinach with the salt, bean curd cheese and shrimp sauce, and continue to stir-fry over a high heat for 1 minute. Reduce the heat to medium, add the garlic and allow the contents to cook for 1 minute more.

  4. Add the lard. When it has an melted, turn the leaves over 2-3 times. (Chicken fat or butter can be used instead of lard for ‘glossing’ the spinach just before dishing out.) Serve immediately.
