Chinese Recipes - Stir-Fried Bean Curd Recipe

Ingredients

  • 4 cakes bean curd (about 450 g/1 lb)
  • 15 ml (1 tablespoon) dried shrimps
  • 37 mt(2 1/2 tablespoons) lard (use oil if not available)
  • 15 ml (1 tablespoon) pork fat diced in small cubes
  • 15 ml (1 tablespoon) chopped shrimps onion
  • 2-3 cloves garlic, finely chopped
  • 15 ml (1, tablespoon) finely chopped ginger
  • 90 ml (6 tablespoons) stock blended with 15 ml (1 tablespoon) corn flour
  • 1/2 chicken stock cube
  • 15 ml (1 tablespoon) soy sauce
  • 15 ml( (3 teaspoons) soy paste
  • 30ml (2 tablespoons) Chinese yellow wine or sherry
  • 10 ml (2 teaspoons) chili sauce

Serve 6-8

Method:

  1. Steam the bean curd far 10 minutes, then cut it into small cubes.  Soak the shrimps in hot water for 20 minutes and drain them.

  2. Heat the lard in a frying pan. Add the diced pork fat cubes, and shrimps. Stir them over a medium heat for 2 minutes.

  3. Add the onion, garlic and ginger. Stir them round with the other ingredients for 1 minute. Add the blended stock, stock cube, soy sauce, soy paste and wine.

  4. As soon as the liquid thickens, add all the bean curd. Turn and mix everything together over a medium heat for 3-4  minutes.

  5. Serve in a large bowl. This is another dish of the people very, satisfying eaten with rice.
