Chinese Recipes - Splash-Fried Bean Sprouts Recipe
Ingredients
- 3 cloves garlic
- 2 stalks spring onion
- 550 g (1 1/4 lb) fresh bean sprouts
- oil for deep-frying
- 22 ml (1 1/2 tablespoons) soy sauce
- 10 ml (2 teaspoons) salt
- 22 ml (1 1/2 tablespoons) sesame oil

Method:

Crush the garlic and chop it coarsely. Cut the spring onion into small sections.

Place the bean sprouts in a close-meshed wire basket, and suspend this over a pan of boiling oil. Sprinkle the top of the sprouts with the spring onion and garlic.

Using a large ladle, pour 8-10 ladlefuls of boiling oil slowly and evenly over the vegetables in the wire basket.

Shake the sprouts free of any excess oil over the oil pan and turn the basketful of sprouts on to a well-heated dish.

Sprinkle the vegetables evenly with soy sauce, salt and sesame oil. Turn and toss them together, and this hot sprout salad is ready for eating.
