Chinese Recipes – Quick-Fried Tomatoes Recipe

Ingredients
- 10 firm, medium tomatoes
- 3 stalks spring onion
- 60 ml (4 tablespoons) lard (use oil if not available)
- 10 ml (2 teaspoons) sugar
- 7.5 ml (1 1/2 teaspoons) salt
- 30 ml (2 tablespoons) soy sauce
Serve 6-8

Method:

Skin the tomatoes by pouring boiling water over them. Cut each into 6 wedge-shaped pieces. Cut the spring onions into small sections.

Heat the lard in a frying pan. Add the spring onions, and stir them a few times in the hot fat.

Put in the tomatoes, turn them a few times with the fat and spring onions, sprinkle with the sugar, salt and soy sauce and leave to cook for 1 1/2 minutes.

Stir them around once more and serve. Another simple dish, but very popular during the summer.
