Chinese Recipes - Crunchy Pickled Cucumber or Cabbage Recipe

Ingredients

  • 2 medium cucumbers or 1 large hard white cabbage
  • 4 dried chili peppers
  • 20 ml (4 teaspoons) salt
  • 45 ml (3 tablespoons) gin
  • 250 ml (1 pint) malt sugar

Serve 4-6

Method:

  1. Cut the cucumber or cabbage into thin slices. Shred the chili peppers (discarding the pips). Sprinkle and rub the salt, pepper and gin over the vegetable. Leave to season for a couple of hours.

  2. Place the mixture in a jar, pour in the vinegar and mix the ingredients together, leave to stand for 3 days in winter or 2 days in summer (the marinade can be drained off or used again), turning or shaking once a day.

Note: Cabbage or cucumber prepared in this way is drained and served in small dishes as an accompaniment to any rich meat, fish or sea­food dishes.
