Chinese Recipes - Braised White-Cooked Chinese Cabbage Recipe

Ingredients

  • 1 medium Chinese cabbage (about 900 g/2 lb)
  • 1 medium onion
  • 45 ml (3 tablespoons) lardĀ (use oil if not available)
  • 12 ml (2 1/2 teaspoons) salt
  • 250 ml (1/2 Pint) stock
  • 1/2chicken stock cube
  • 15 m( (1 tablespoon) corn flourĀ blended, in 60 ml (4 tablespoons) milk

Method:

  1. Clean and cut the cabbage into small. thin pieces. Cut the onion into thin slices.

  2. Heat the lard in a large saucepan. Add the onion, stir and leave it to fry gently over a medium heat for 1 1/2 minutes.

  3. Add the cabbage, stir and turn it with the onion and lard. Sprinkle with the salt, and leave to simmer for 3 minutes. Add the stock and crushed stock cube.

  4. Bring to the boil. Leave to simmer again for 3-4minutes. Add the blended corn flour. Turn it a few times with the cabbage and soup.

  5. When the soup thickens, turn the contents round a few more times, sprinkle with freshly ground pepper and serve in a large deep-sided dish.

  6. Although this is an extremely simple dish it has a meat-like quality about it, and is often eaten with rice in the absence of meat dishes.
