Chinese Recipes - Braised Hearts of Spring Cabbage or Spring Greens Recipe

Ingredients

  • 3 small spring cabbages (about 675 g/1 1/2 lb in all)
  • 52 ml (3 1/2 tablespoons) vegetable oil
  • 5 ml (1 teaspoon) salt
  • 45 ml (3 tablespoons) soy sauce
  • 90 ml (6 tablespoons) stock
  • 5 ml (1 teaspoon) sugar
  • 15 ml (1 tablespoon) lard or chicken fat

Method:

  1. Cut the cabbage into 3.75 cm (1 1/2 in) thick slices, removing any rough stems and discolored leaves.

  2. Heat the oil in a saucepan. Add the cabbage, sprinkle with salt and stir over a high heat for 1 minute. Reduce the heat to medium and sprinkle with the soy sauce, stock and sugar. Stir and turn for 1 1/2 minutes.

  3. Reduce the heat to low, cover the saucepan and leave the contents to cook gently for 5-6 minutes. Add the lard or chicken fat and turn the leaves over a few more times.

  4. Serve in a large bowl or deep-sided dish. The flavor can be varied by adding dried shrimps to the oil during the initial part of the cooking.
