Chinese Recipes - Azuki Bean Rice Recipe

Ingredients

  • 8 large Chinese dried mushrooms
  • 4-6 water chestnuts
  • 450 g (1 lb) selected broccoli
  • 5 ml (1 teaspoon) salt
  • 15 ml (1 tablespoon) vegetable oil
  • 375 ml (3/4 pint) stock
  • salt and pepper to taste
  • 7 ml (1/2 tablespoon) Rose Dew Liqueur (Mei Kwei Lu)

    Method:

    1. Soak the mushrooms in water for 30 minutes and remove the stalks. Cut each water chestnut into 6 slices. Break the broccoli into individual branches. Parboil the broccoli and mushrooms for 1 minute and drain them. Sprinkle and rub them with salt and oil.

    2. Arrange the vegetables neatly in a deep-sided heatproof dish. Pour in the stock and adjust the seasoning.

    3. Cover the dish firmly with tinfoil, put in into a steamer, and steam steadily for 30 minutes. Remove the tinfoil, sprinkle with Rose Dew, and serve.

    Note: This dish is known as Perfumed Broccoli and Mushrooms in the restaurant, which the favor of the Rose dew makes this dish more delicious.
