Chinese Recipes - Strange-Flavored Chicken Recipe

Ingredients

  • 5 pairs of chicken legs
  • 2 large onions

Sauce:

  • 45 ml (3 tablespoons) sesame seeds
  • 15 ml (1 tablespoon) sugar
  • 10 ml (2 teaspoons) chili sauce
  • 15 ml (1 tablespoon) sherry
  • 30 ml (2 tablespoons) sesame paste
  • 37 ml (2 1/2 tablespoons) vinegar (Chinese aromatic, if available)
  • 2 ml (1 teaspoon) black pepper
  • 45 ml (3 tablespoons) soy sauce

Serve 4

Method:

  1. Place the chicken legs in a large pan of water. Bring to the boil, and simmer gently for 25 minutes. Chop the onions and spread them evenly as bed over a large serving dish.

  2. Drain and remove the bones nom chicken legs with a sharp knife, minimizing the incision. Cut the meat slantwise into thin circular pieces, and arrange them on top of the onion.

  3. Heat the sesame seeds, on a small dry frying pan over a low heat. Stir for 3-4 minutes, until they have turned brown and aromatic but not scorched.

  4. Mix half the sesame seeds in with the other ingredients for the sauce and blend well. Pour the sauce evenly over the chicken pieces and sprinkle them with the remainder of the toasted seeds.
