Chinese Recipes - Quick Soft-Fried Sliced Duck Liver Recipe

Ingredients

  • 175-225g/6-8 oz smoke duck meat
  • 8 slices root ginger
  • 3 stalks celery
  • 6 stalks spring onion
  • 3 chili peppers
  • 52 ml/3 1/2 tbsp lard (use oil if not available)
  • 22ml/1 1/2 tbsp soy paste
  • 22ml/1 1/2 tbsp soy sauce
  • 22ml/1 1/2 tbsp stock
  • 5ml/1 tsp sugar
  • 22ml/1 1/2 tbsp vinegar
  • 2ml/1/2 tsp sesame oil

Serve 4-6

Method:

  1. Cut the duck meat into triple matchstick sized strips and the ginger and celery similarly. Cut the spring onions into short segments, and the chili peppers into shreds.

  2. Heat the lard in a large frying pan. Add the duck meat and soy paste. Stir-fry quickly over a high heat for 1/2 minute. Add the ginger, celery, pepper and spring onion. Sprinkle with soy sauce and stock.

  3. Continue to stir-fry the ingredients together for 2 minutes. Sprinkle with sugar, vinegar and sesame oil. Stir-fry quickly for a further 1/2 minute over a high heat and serve immediately.
