Chinese Recipes - Quick-Fried Shredded Chicken with Vegetables Recipe

Ingredients

  • 100g/1/4lb chicken breast meat
  • 5ml/1 tsp salt
  • 22ml/1 1/2 tbsp corn flour
  • 1 egg white
  • 6 large Chinese dried mushrooms
  • 1/2 green pepper
  • 1/2 red pepper
  • 3 golden needles (tiger lily buds)
  • 60ml/4 tbsp vegetable oil
  • 30ml/2 tbsp soy sauce
  • 1/2 chicken stock cube
  • 22ml/1 1/2 tbsp dry sherry
  • 15ml/1 tbsp chicken fat
  • 7ml/1/2 tbsp sesame oil

Method:

  1. Cut the breast of the chicken into fine thread-like pieces. Mix and, rub these with the salt, corn flour and egg-white.

  2. Soak the mushrooms in water for 20 minutes, drain and remove the stalks. Cut the mushroom caps and the other vegetables into similar thread-like shreds. Soak the golden needles in water for 10 minutes, and drain them.

  3. Heat the oil in a frying pan; add the shredded chicken, and stir quickly over a high heat for 1 minute. Remove and set aside.

  4. Add the shredded vegetables to the frying pan along with the chicken fat. Stir and quick-fry over a high heat for 3, minutes.

  5. Return the shredded chicken to the pan. Add the soy sauce, stock cube, sherry and finally the sesame oil. Stir quickly for 45 seconds and serve on a well-heated dish, to be eaten immediately.
