Chinese Recipes - Lotus Leaf Wrapped Duck Recipe

Ingredients

  • 1 medium duck about 1.8-2.2kg/4-5 lb
  • 2-3 lotus leaves (dried)
  • 75-90ml/5-6 tbsp coarsely ground rice
  • 2 medium onions
  • 4 slices root ginger
  • 37ml/2 1/2 tbsp soy sauce
  • 30ml/2 tbsp hoisin sauce
  • 45ml/3 tbsp dry sherry
  • 7ml/1/2 tbsp sugar
  • 10ml/2 tsp crushed peppercorns
  • 75-90ml/5-6 tbsp ground pudding rice

Method:

  1. Chop the duck through the bone into approximately 24 pieces and, place them in a basin. Soak the lotus leaves in water and cut them into 8 equal pieces.

  2. Heat the ground rice in a dry pan and stir over a medium heat until slightly aromatic (about 2 1/2 minutes).

  3. Cut the onions and ginger into thin slices, then chop them coarsely. Put them in a bowl. Add the soy sauce, hoisin sauce, sherry, sugar, crushed peppercorns and pudding rice.

  4. Mix them together thoroughly and pour over the duck. Make sure the pieces of duck are well coated with the mixture, and leave to marinate for 1 hour.

  5. Wrap 3 pieces of duck in each piece of lotus leaf, and secure with a, wooden cocktail skewer. Arrange these lotus-leaf parcels on a heatproof dish, and put the latter in a steamer to steam vigorously for 2 hours.

  6. Bring the dish to the table. Each diner takes a parcel, which he unwraps to eat the contents along with the other items on the table.
