Chinese Recipes – Aromatic and Crispy Chicken Drumsticks Recipe
Ingredients
- 4 slices root ginger
- 2 medium onions
- 5 ml (1 teaspoon) salt
- 45 ml (3 tablespoons) soy sauce
- 30 ml (2 tablespoons) sherry
- 22 ml (1 1/2 tablespoons) five spice (in pieces, not powder)
- 22 ml (1 1/2 tablespoons) sugar
- 12 chicken drumsticks
- 30 ml (2 tablespoons) corn flour
- 6 lettuce leaves
Dip:
- 45-60 ml (3-4 tablespoons) Aromatic Salt and Pepper mix

Method:

Chop the ginger and onion coarsely. Add them along with the salt, soy sauce, sherry five- spice, and sugar to the drumsticks, and rub them in with the fingers. Leave to season for 3-5 hours in a heatÂproof basin.

Cover the top of the basin with foil and put it into a steamer to steam for 1 1/2 hours. Shake the drumsticks free of marinating inÂgredients.

Sprinkle and rub the drumsticks With the corn flour. Shake off any excess of corn flour, place the drumsticks 6 at a time in a wire basket, and deep-fry them in hot oil for 5-6 minutes over a high heat. Drain them.

Finally put all 12 drumsticks back in the basket, deep-fry them for another 1-2 minutes and drain again.

Spread the lettuce leaves over a large dish, and arrange the drumÂsticks neatly on top. Diners dip the drumsticks in the Salt and Pepper Mix and eat them with their fingers.
