Chinese Recipes – Aromatic and Crispy Chicken Drumsticks Recipe

Ingredients

  • 4 slices root ginger
  • 2 medium onions
  • 5 ml (1 teaspoon) salt
  • 45 ml (3 tablespoons) soy sauce
  • 30 ml (2 tablespoons) sherry
  • 22 ml (1 1/2 tablespoons) five spice (in pieces, not powder)
  • 22 ml (1 1/2 tablespoons) sugar
  • 12 chicken drumsticks
  • 30 ml (2 tablespoons) corn flour
  • 6 lettuce leaves

Dip:

  • 45-60 ml (3-4 tablespoons) Aromatic Salt and Pepper mix

Serve 8-10

Method:

  1. Chop the ginger and onion coarsely. Add them along with the salt, soy sauce, sherry five- spice, and sugar to the drumsticks, and rub them in with the fingers. Leave to season for 3-5 hours in a heat­proof basin.

  2. Cover the top of the basin with foil and put it into a steamer to steam for 1 1/2 hours. Shake the drumsticks free of marinating in­gredients.

  3. Sprinkle and rub the drumsticks With the corn flour. Shake off any excess of corn flour, place the drumsticks 6 at a time in a wire basket, and deep-fry them in hot oil for 5-6 minutes over a high heat. Drain them.

  4. Finally put all 12 drumsticks back in the basket, deep-fry them for another 1-2 minutes and drain again.

  5. Spread the lettuce leaves over a large dish, and arrange the drum­sticks neatly on top. Diners dip the drumsticks in the Salt and Pepper Mix and eat them with their fingers.
