Chinese Recipes – Yunnan Simmered Pork with Soup Recipe

Ingredients

  • 1.35 kg (3 lb) belly of pork

Soup:

  • 15 ml (1 tablespoons) sesame oil
  • 45 ml (3 tablespoons) good quality soy sauce
  • 7 ml (1/2 tablespoon) chili sauce

Garlic-and-Ginger Oil (makes 30 ml/2 tbsp):

  • 2 slices root ginger

  • 2 cloves garlic

  • 30 ml (2 tablespoons) vegetable oil

Soup:

  • 12 ml (3/4 tablespoon) salt
  • 30 ml (2 tablespoons) chopped spring onion

Method:

  1. Cook the pork in boiling water for 10 minutes. Drain and cut it into chopstick-thick, longish slivers. Prepare the garlic-and-ginger oil by heating the slices of ginger and adding the garlic (crushed) in the vegetable oil. Blend this mixture with soy sauce, chili sauce, and sesame oil.

  2. Heat 1.5 liters (3 pints) water in a large heavy saucepan. Add the pork slivers and simmer gently for 1 1/4 hours, when the liquid in the pan should be reduced by a quarter. Drain the pork. Skim the soup for any excess fat.

  3. While the pork is still hot, pour the sauce mixture over it and serve. At the same time divide the salt and chopped spring onion among 6-8 bowls. Pour the soup into the bowls and serve.
