Chinese Recipes - Yunnan Quick-Fried Sneed Ham with Spring Onion Recipe

Ingredients
- 450 g (1 lb) Yunnan ham (or York ham)
- 6 stalks large firm spring onions
- 225 g (1/2 lb) bamboo shoots
- 7 ml (1/2 tablespoon) sugar
- 60 ml (4 tablespoons) lard (use oil if not available)

Method:

First cut the ham into medium-sized thick slices, and then cut each piece lengthwise into matchstick-sized strips. Cut the spring onions into longish segments, and the bamboo shoots into similar-sized strips.

Heat the lard in a large frying pan. When hot add the ham and bamboo shoots and stir over a high heat for 30 seconds, then add the spring onion, and stir and turn for 20 seconds.

Sprinkle the contents with sugar, and stir and turn for a further 10 seconds. Serve immediately on a well-heated dish.
Note: A simple, quick-to-cook but effective recipe.
