Chinese Recipes – Vegetable Rice Recipe

Ingredients

  • 450 g (1 lb) long grain rice
  • 550 g (1 1/4 lb) spring greens or green cabbage
  • 12 ml (2  teaspoons) salt
  • 30 ml (2 tablespoons) lard (use oil if not available)

Method:

  1. Soak the rice in water for 1 hour and drain it. Remove all the discolored leaves from the cabbage, or spring greens, and cut away the tough roots. Cut the leaves into 2.5 cm (1 in) slices.

  2. Heat the lard in a large heavy pot or casserole. Add the cabbage, or greens, and the salt. Turn the leaves in the hot oil for about 3 minutes until well covered. Pour in the rice, and add 500 ml (1 pint) water. Bring to the boil.

  3. Reduce Pie heat to low and simmer for 10-12 minutes. Turn the heat off and allow the contents to continue cooking in the remaining heat, tightly covered, for the next 10-12 minutes.

  4. Serve like ordinary rice at a Chinese meal as an accompaniment to two or more other dishes, some stir-fried, others stewed.
