Chinese Recipes - Chungking Dan Dan Mien, or Plain-Tossed Economy Noodles Recipe

Ingredients
- 900 g-1.2 kg (2-2 1/2 lb) noodles (spaghetti-shaped variety)
Sauce:
- 90 ml (6 tablespoons) bean sprouts
- 15 ml (1 tablespoon) chili sauce (or chili, oil)
- 30 ml (2 tablespoons) lard (use oil if not available)
- 30 ml (2 tablespoons sesame oil
- 75 ml (5 tablespoons) good quality soy sauce
- 30 ml (2 tablespoons) stock
- 45 ml (3 tablespoons) sesame paste (or peanut butter)
- 4 cloves garlic. crushed and finely chopped
- 60 ml (4 tablespoons) coarsely chopped spring onion
Serve 6

Method:

Boil the noodles for 5-6 minutes (or spaghetti for 15 minutes) and drain. Mix the sauce ingredients together thoroughly in a bowl.

Divide the sauce ingredients equally among 6 large bowls. Immediately after draining the noodles, put them in the bowls on top of the sauce.

Sprinkle each bowl with chopped spring onions. Each diner tosses his own portion of noodels with its sauce and garnish.
Note: An economical but aromatic and highly satisfying dish.
