Chinese Recipes - Cha Chiang Mien or Hot Tossed Noodles with Minced Meat Recipe

Ingredients

  • 100 g ( 1/2 lb) bean sprouts
  • 45 ml (3 tablespoons) vegetable oil
  • 350 g (3/4 lb) minced pork
  • 30 ml (2 tablespoons) bean paste sauce
  • 22 ml (1 1/2 tablespoons) soy sauce
  • 7 ml (1/2 tablespoon) sugar
  • 45 ml (3 tablespoons) stock
  • 15 ml (1 tablespoon) corn flour blended in 45 ml (3 tablespoons) water
  • 675 g (1 1/2 lb) noodles or spaghetti

Shredded Vegetables:

  • 3-4 stalks spring onion
  • 2 large carrots
  • 2 radishes
  • 15 cm (6 in) section of cucumber

Serve 4-6

Method:

  1. Blanch the bean sprouts in boiling water for 30 seconds and drain. Cut the spring onions into medium-sized sections. Cut the carrots and radishes into matchstick-sized shreds.

  2. Heat the oil in a frying pan. Add the minced meat, and stir over a high heat for 5-6 minutes. Add the bean paste, soy sauce and sugar and continue to stir-fry for 2-3 minutes.

  3. Add the stock and blended corn flour, and continue to mix and stir for 2-3 more minute. Boil the noodles for 6-7 minutes, or if spaghetti for 15 minutes, and drain.

  4. Place, the freshly boiled noodles in a large bowl. Pour the meat sauce over these and toss.

  5. Place the shredded vegetables and bean sprouts in smaller bowls on the table, for the diners to mix them with the noodles to their own taste.
