Chinese Recipes - Boiled Noodles in Meat Sauce with Eggs (Lu Mien) Recipe
Ingredients
- 0.9-1.2 kg (2-2 1/2lb) belly of pork
- 60-75 ml (4 tablespoons) soy sauce
- 5 ml (1 teaspoon) sugar
- 4 hard-boiled eggs
- 125 ml (t Pint) stock
- 900 g (2lb) noodles or spaghetti
- 30 ml (2 tablespoons) corn flour blended in 105-120 ml (7-8 tablespoons) water
- 60 ml (4 tablespoons) Chinese yellow wine or dry sherry

Method:

Cut the pork into 4 pieces. Heat them in a small casserole with the soy sauce, sugar and 125 ml (1/4 pint) water. Bring the contents to the boil, put an asbestos mat under the casserole, and simmer very gently for 1 1/2 hours, turning the meat every 30 minutes.

Add the hard-boiled eggs and stock, and adjust the seasoning with 15-30 ml (1-2 tablespoons) soy sauce. Turn the pork pieces around and simmer them together with the other ingredients for a further 30 minutes.

Boil the noodles for 5-6 minutes, or if spaghetti for 15 minutes. Drain and divide the noodles among as many bowls as there are people.

Cut each egg and each piece of pork in half, and place a piece of each on top of each bowl of noodles.

Heat the casserole over a high heat. Add the blended corn flour and yellow wine and stir into the gravy. As soon as the sauce thickens, pour an appropriate amount over each bowl of pork, egg and noodles and serve.
