Chinese Recipes – Sung’s Sister-in-Law Fish-Soup Noodles Recipe

Ingredients

  • 900 g (2Ib) carp
  • 1.5 liters (3 pints) stock
  • 22 ml (1 1/2 tablespoons) corn flour
  • 1 egg
  • oil for deep- or semi-deep-frying
  • 900 g (2 lb) noodles (or spaghetti)

soup:

  • 1.5 liter (3 pints) stock
  • 4 slice root ginger
  • 10 ml (2 teaspoons) salt
  • 225 g (1/2 lb) bamboo shoots
  • 15 ml (1 tablespoon) dried shrimps
  • 30 ml (2 tablespoons) soy sauce
  • 2 chicken stock cubes
  • pepper to taste
  • 15 ml (1 tablespoon) corn flour blended in 60 ml (4 tablespoons) water

For Tossing with Noodles:

  • 90 ml (6 tablespoons) coarsely chopped bean sprouts
  • 60 ml (4 tablespoons) coarsely chopped spring onion
  • 45 ml (3 tablespoons) lard (use oil if not available)
  • 45 ml (3 tablespoons) vinegar

Serve 6

Chinese Recipes – Chungking Dan Dan Mien, or Plain-Tossed Economy Noodles Recipe

Ingredients

  • 900 g-1.2 kg (2-2 1/2 lb) noodles (spaghetti-shaped variety)

Sauce:

  • 90 ml (6 tablespoons) bean sprouts
  • 15 ml (1 tablespoon) chili sauce (or chili, oil)
  • 30 ml (2 tablespoons) lard (use oil if not available)
  • 30 ml (2 tablespoons sesame oil
  • 75 ml (5 tablespoons) good quality soy sauce
  • 30 ml (2 tablespoons) stock
  • 45 ml (3 tablespoons) sesame paste (or peanut butter)
  • 4 cloves garlic. crushed and  finely chopped
  • 60 ml (4 tablespoons) coarsely chopped spring onion

Serve 6

Chinese Recipes – Fish Soup Noodles from Chingkiang Recipe

Ingredients

  • 675g (1 1/2 lb) filleted fish (bass, mullet, bream, cod, carp, trout, salmon, whiting, halibut, sole, etc)
  • 100 g (1/4 lb) bamboo shoots
  • 100 g (1/4 lb) heart of cabbage
  • 6-8 medium Chinese dried mushrooms
  • 450 g (1 lb) noodles or spaghetti spoons) water
  • 45 ml (3 tablespoons) vegetable oil
  • 22 ml (1 1/2 tablespoons) soy sauce
  • 30ml (2 tablespoons) dry sherry
  • 5 ml (1 teaspoon) sugar
  • 7 ml (1/2 tablespoon) corn flour blended in 45 ml (3 tablespoons) water

Stock:

  • 1 large fish head (675-900 g/1 1/2-2 lb)
  • 1 fish tail (225 g/1/2 lb)
  • 37 ml (2 1/2 tablespoons) lard (use oil if not available)
  • 3 slices root ginger
  • 1 medium onion, sliced
  • 10 ml (2 teaspoons) salt

Serve 4-6
