Chinese Recipes - Quick Double-Fried Eggplant (Aubergine) in Soy Paste Sauce Recipe

Ingredients
- 675 g (1 1/2 lb) eggplants (aubergines) sauce
- 2 slices root ginger
- vegetable oil for shallow-frying (about 250 ml/1/2 pint) or deep-frying
- 22 ml (1 1/2 tablespoons) lard (use oil if not available)
- 22 ml (1 1/2 tablespoons) soy paste
- 15 ml (1 tablespoon) soy sauce
- 2.5 ml (1/2 teaspoon) chili sauce
- 2.5 ml (1/2 teaspoon) sugar
- 30 ml (2 tablespoons) stock
- 30 ml (2 tablespoons) dry sherry
Serve 4-6
