- 4 slices root ginger
- 12 ml (3/4 tablespoon) pepper
- 1.8-2.2 kg (4-5 lb) duck
- 15 ml (1 tablespoon) sea salt
- 30 ml (2 tablespoons) lard (use oil if not available)
