Chinese Recipes – Quick-Fried Chicken with Chestnut Recipe

Ingredients

  • 100 g (1/4 lb) breast of chicken
  • 5 ml (1 teaspoon) salt
  • 22 ml (1 1/2 tablespoons) corn flour
  • 45 ml (3 tablespoons) stock
  • 22 ml (1 1/2 tablespoons) dry sherry
  • 15 ml (1 tablespoon) soy sauce
  • 5 ml (1 teaspoon) sugar
  • 3 stalks spring onion
  • 125 ml (1/4 pint) vegetable oil for shallow-frying
  • 100 g (1/4 lb) peeled chestnuts
  • 10 ml (2 teaspoons) lard (use oil if not available)
  • 10 ml (2 teaspoons) sesame oil

Serve 4-6

  • 6 large Chinese dried mushrooms
  • 50 g (2 oz) bamboo shoots
  • 1 large water melon (about 2.65 kg/5-6 lb)
  • 3 slices root ginger
  • 12 ml (2 1/2 teaspoons) salt
  • 50-75 g (2-3 oz) ham
  • 45 ml (3 tablespoons) dry sherry
  • 22- 10 ml (2 teaspoons) shrimp sauce

Serve 6-8

  • 1 small onion
  • 3 stalks spring onion
  • 10 chicken drumsticks
  • 3 slices root ginger
  • 52 ml (3 1/2 tablespoons) lard or vegetable oil
  • 5 ml (1 teaspoon) curry powder
  • 7 ml (1/2 tablespoon) salt
  • 45 ml (3 tablespoons) tomato puree
  • 30 ml (2 tablespoons) dry sherry
  • 10 ml (2 teaspoons) sugar
  • 90 ml (6 tablespoons) chicken stock
  • 15 ml (1 tablespoon) corn flour blended in 45 ml (3 tablespoons) water

Serve 10
