Ingredients
- 1.5-2.2 kg duck
- 2 ml (1/2 teaspoon) black pepper
- 30 ml (2 tablespoons) soy sauce
- 15 ml (3 teaspoons) salt
- 4-5 slices root ginger
Sauce:
- 1 medium onion
- 1 red pepper
- 2 chili peppers
- 30 ml (2 tablespoons) salted black beans
- 45 ml (3 tablespoons) sherry
- 7 ml (1 1/2 teaspoons) sugar
- 7 ml (1 1/2 teaspoons) corn flour blended in 45 ml (3 tablespoons) water
- 1/2 chicken stock cube
- 30 ml (2 tablespoons) lard (use oil if not available)
Serve 4-6

Ingredients
- 225 g (1/2 lb) duck meat (un-cooked, carved from breast, sides and legs)
- 100 g (1/4 lb) winter bamboo shoots
- 8 medium Chinese dried mushrooms
- 5 ml (1 teaspoon) sugar
- 22 ml (1 1/2 tablespoons) soy
- 15 ml (1 tablespoon) vinegar
- 75 ml (5 tablespoons) chicken stock or duck stock
- 45ml (3 tablespoons) vegetable oil
- 22 ml (1 1/2 tablespoons) dry sherry
- 2 ml (1/2 teaspoon) salt
- 15 ml (1 tablespoon) duck fat
Serve 6-8

Ingredients
- 1 medium-sized young chicken (about 1.5 kg/3 1/2 lb)
- 6 slices root ginger
- 15-20 ml (1-1 1/3 tablespoons) ground cinnamon, cloves or nutmeg or, if available 12 ml (3/4 tablespoon) five-spice mixture in pieces, not powder
- 3 stalks spring onion
- 30 ml (2 tablespoons) wine sediment paste (otherwise use30 ml/2 tablespoons brandy)
- 90 ml (6 tablespoons) dry sherry
Serve 8-10
