Chinese Recipes – Stuffed Barbecue Duck Recipe

Ingredients
- 6 stalks spring onion
- 1 sheet dried lotus leaf
- 90ml/6 tbsp pudding rice
- 6 slices root ginger
- 22ml/1 1/2 tbsp pepper-corns, lightly crushed
- 22ml/1 1/2 tbsp soy sauce
- 1 duck (1.8-2.5kg/4-5 1/2lb)
- 15ml/1 tbsp sugar blended in 90ml/6 tbsp water
Serve 8-10
