Ingredients

  • 100g/1/4lb chicken breast meat
  • 5ml/1 tsp salt
  • 22ml/1 1/2 tbsp corn flour
  • 1 egg white
  • 6 large Chinese dried mushrooms
  • 1/2 green pepper
  • 1/2 red pepper
  • 3 golden needles (tiger lily buds)
  • 60ml/4 tbsp vegetable oil
  • 30ml/2 tbsp soy sauce
  • 1/2 chicken stock cube
  • 22ml/1 1/2 tbsp dry sherry
  • 15ml/1 tbsp chicken fat
  • 7ml/1/2 tbsp sesame oil

Serve 6-8

Ingredients

  • 1 medium chicken (about 15-2 kg/3 1/2-4 1/2lb)
  • 10 ml (2 teaspoons) salt
  • 30 ml (2 tablespoons) soy sauce
  • 45 ml (3 tablespoons) Chinese yellow wine or dry sherry
  • oil for deep-frying
  • 3 stalks spring onion
  • 1.25 liters (2 1/2pints) chicken stock
  • 3 slices root ginger
  • 1 chicken stock cube
  • 30ml (2 tablespoons) soy sauce
  • 250-375 ml (1/2-3/4 pint) red (grape) wine

Serve 8-10

Chinese Recipes - Diced Chicken Cubes in Bean Sauce Recipe

Ingredients

  • 225 g (1/2 lb) chicken breast meat
  • 1 egg-white
  • 10 ml (2 teaspoons) corn flour blended in 22 ml (1 1/2 tablespoons) water
  • 125 ml (1 pint) vegetable oil

Sauce:

  • 30 ml (2 tablespoons) lard (use oil if not available)
  • 15 ml (1 tablespoon) brown bean paste
  • 7 ml (1/2 tablespoon) sugar
  • 10 ml (2 teaspoons) ginger water (heat 2 slices ginger in 30 ml/2 tablespoons) water until the water is reduced by half-use only the water)
  • 15 ml (1 tablespoon) dry sherry

Serve 6-8
