Ingredients
- 5 pairs of chicken legs
- 2 large onions
Sauce:
- 45 ml (3 tablespoons) sesame seeds
- 15 ml (1 tablespoon) sugar
- 10 ml (2 teaspoons) chili sauce
- 15 ml (1 tablespoon) sherry
- 30 ml (2 tablespoons) sesame paste
- 37 ml (2 1/2 tablespoons) vinegar (Chinese aromatic, if available)
- 2 ml (1 teaspoon) black pepper
- 45 ml (3 tablespoons) soy sauce

- 1 medium onion
- 8-10 pairs of chicken wings
- 5 ml (1 teaspoon) salt
- 45 ml (3 tablespoons) lard (use oil if not available)
- 4 slices root ginger
- 27 ml (1 3/4 tablespoons) soy
- 250 ml (1/2 pint) chicken stock
- 7 ml (1/2) sesame oil
- 30 ml (2, teaspoons) corn flour
- 30 ml (2 tablespoons) sherry

- 1.35-1.8 kg (3-4 lb) chicken
- 30 ml (2 tablespoons) dry sherry or yellow rice wine
- 15 ml (1 tablesp60n) salt
- Stuffing:
- 75-100 g (3-4 oz) lean-and-fat pork
- 1 red pepper
- 1 green pepper
- 2 dried chili peppers
- 4-5 slices, root ginger
- 1 large onion

- 100 g (4 oz) bean sprouts
- 2 ml (1/2 teaspoon) salt
- 22 ml (1 1/2 tablespoons) soy sauce
- 7 ml (1/2 tablespoon) malt sugar
